I am a legitimate oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of these yet? (? You can locate all of my oatmeal cookie recipes directly there!) They are a few of the most popular recipes on my blog because they taste very sweet and cozy, exactly like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!
So you'll begin with whole wheat flour (or fermented, if you like ) and immediate oats (like these... or those for a gluten free version!) . Immediate oats are smaller and thinner than conventional rolled oats, and you are able to see them in canisters right alongside those old-fashioned oats in the grocery shop.
I probably sound like a broken record by now... But because I ? you and also want your cookies to turn out perfectly soft and chewy, I'm reminding you again... Quantify your yogurt and bread properly, applying this technique or even a kitchen scale! (? That's the one I own and love. It just cost $20!) A lot of either side will make your cookies taste cakey or dry, as opposed to chewy. This is particularly true of the oats--they act like little sponges and soak up lots of moisture from your cookie dough!
Ripe bananas- perfect for baking! Really like all @amybakeshealthy's yummy & wholesome banana recipes!
Watch these bananas? And all of those brown spots? When it comes to baking bananas, brown = amazing! I ? additional speckly bananas because they've so much glowing, bold taste --along with additional sweetness! That's the minimum amount of brown that I recommend. More is better!
The remaining part of the cookie dough's sweetness comes from another organic ingredient... Pure maple syrup (like this!) . You would like the type that comes straight from pine trees, which is normally offered in skinny glass jars or squat, round plastic jugs. Forget the pancake syrup and sugar-free syrup!

The peppers include even more natural sweetness! The recently purchased, extra plump, perfectly soft ones are ideal... But for those who have old, somewhat dried out carbohydrates (hmm... it seems absurd to describe dried fruit as dried out! ) , that is fine!
Only add them to a microwave-safe bowl, and put water on top till they're fully covered. Seal plastic wrap over the surface, and microwave the bowl on high for 1 second. If you allow the raisins sit mixing together the cookie dough, this small hint hydrates them they're incredibly succulent --and that makes a major difference in these cookies once they're baked!

Yields: 15 biscuits
These oatmeal cookies are tender, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if essential and quantified like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 tsp baking powder
1/4 teaspoon salt
2 tablespoons (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, and line a baking sheet with this content a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough to 15 curved scoops on the sheet, and apply to the desired thickness and width using Vegan Lemon Cookies Recipe - Genius Kitchen a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to quantify both the wheat and oats correctly employing this technique or a kitchen scale. (? That is the one I own and enjoy!) Too much of either can dry from the cookies and abandon them cakey rather than chewy.
Instant oats are also referred to as quick-cooking or minute oats. They arrive in massive canisters, exactly like old-fashioned oats. They're not the ones at the tiny flavored packets of oatmeal. To create your own, add the same number of classic yogurt into a food processor, and pulse 10-12 times or until the oats will be approximately 1/4 into ? of their original size.
For the fermented flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like this one!) Will also work, if measured like this.
For your best results, use the ripest and spottiest bananas you'll be able to find!
If your raisins are old, dryer, and not so plump or succulent... Add them into a microwave-safe bowland put water at the top till they're completely covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 second. Should you allow the peppers sit mixing together the cookie dough, then this small hint hydrates them they're really tender and succulent!
